Pumpkin Pasta HT Veg MC 25mins
Serves 4 Hot Vegetarian Vegetables Main Course Pasta Eggless
Ingredients 350g/12oz Spaghetti or Linguine 1 tbsp Vegetable Oil 675g/1½ lb Pumpkin Flesh, grated 2 tbsp Tomato Puree 150ml/5fl.oz. Sour Cream ½ teasp Chilli Powder
Instructions
1. Heat the oil in a large saucepan, add the pumpkin and cook for about 15 minutes or until it begins to break apart.
2. Meanwhile, bring a large saucepan of heavily salted water to the boil, add the pasta and cook for 8 to 10 minutes.
3. Add tomato paste, sour cream and chili powder to the cooked pumpkin and cook until heated through, stirring constantly.
4. To serve - drain the pasta well and transfer to a large serving dish. Pour over the pumpkin sauce and toss to mix well. Serve immediately.
