A Weekday Menu Recipe

 

Stilton Topped Mushrooms  Veg  HT  MC  English   20mins

 

Serves  4     Hot  Vegetarian  Vegetables  British   Main Course   Eggless  England  British  Europe

 

 

Ingredients

12 Large Flat Mushrooms

50g/2oz Butter

2 Shallots, finely chopped

175g/6oz Stilton Cheese

25g/1oz Fresh white Breadcrumbs

Salt and Black Pepper

 

 

Instructions

 

1. Preheat the oven to 180C, 350F, Gas Mark 4. Remove the stalks from the mushrooms and chop finely.

 

2. Wipe the caps with damp kitchen paper.

 

3. Melt  half  the butter in a saucepan add the chopped mushroom stalks and shallots and fry gently until soft and transparent.

 

4. Remove the pan from the heat and allow to cool for 5 minutes, then crumble in the cheese and add  the breadcrumbs, salt and pepper. Mix well.

 

5. Use the remaining butter to grease a shallow ovenproof dish, large enough to take the caps in one layer.

 

6. Place the caps in the buttered dish and divide the stilton mixture between them, smoothing lightly.

 

7. Bake in the oven for 15-20 minutes until the caps are just tender and the topping is golden and bubbling. Serve immediately.
