Welsh Rarebit Veg
Main Course Snack
4 thick slices of Bread from a large loaf
225g/8oz Mature Cheddar Cheese, grated
1 level teasp English Mustard
4-5 drops Tabasco Sauce
60ml/2fl.oz. Brown Ale or Bitter (Beer)
Mixed salad and dressing to serve
Preheat the grill to hot. Remove the crusts from the slices of bread then toast
on both sides until lightly browned.
Place the toasted bread in a shallow oven-proof dish and set aside.
Slowly melt the butter in a saucepan then stir in the grated cheese, mustard,
Worcestershire sauce and the ale ( beer ). Mix until well blended.
Divide the mixture between the slices of toast, spreading it evenly, then grill under a hot grill until
bubbling and golden.
To serve - transfer to heated plates and serve with a lightly dressed salad.
