Split Pea Soup RecipeServes 2
Ingredients 1-2 tbsp Olive Oil 1 Medium Onion, chopped 1 Garlic Clove, crushed 75g/3oz Green or yellow Split Peas, soaked overnight in plenty of cold water 600ml/20fl.oz. Strong Stock Salt and Black Pepper 1 Bouquet Garni (made up of herbs such as Thyme, a Bay Leaf and Parsley) Optional Leftover meat from a joint such as beef, lamb, chicken or ham
Instructions
1. Heat the oil in a medium saucepan, add the onion and sauté over a medium heat for 2-3 minutes until just beginning to soften and take on colour.
2. Add the garlic, and sauté stirring for about 1 minute then add the split peas, stock, herbs, salt and black pepper, mix well and bring to the boil.
3. Reduce the heat, cover and simmer for 30-40 minutes until the peas are very soft.
4. Remove from the heat and either using a hand blender process in the saucepan until smooth or allow to cool a little then transfer to a liquidiser and blend until smooth. If necessary, reheat before serving.
Sprinkle with a little fresh parsley and serve hot with crusty bread or croutons.
