Winter is upon us and whilst there isn't such an abundance of locally grown fruit and vegetables in season, there are still lots of other ingredients which are at their best from December to February.

Although there are thousands of recipes on this site suitable for Winter cooking, below are links to seasonal produce featuring information and specially selected recipes using the freshest and best Winter season  ingredients including meat, fish, fruit and vegetables, many of which also include additional useful and informative editorials.

What’s in Season in Winter

Whilst not definitive, below is a list of ingredients which are in season in Winter.
 

 

Fruit and nuts in season in Winter

Almonds, apples,  brazil nuts, chestnuts, cranberries, hazelnuts, lemons, oranges, passion fruit, pears, pomegranate,  tangerines, walnuts


Vegetables, Herbs & Fungi in season in Winter

Beetroot, Brussels sprouts, carrots, cauliflower, celeriac, celery, chicory, horseradish, Jerusalem artichoke, kale, kohlrabi, leeks, mushrooms, onions, parsley, parsnips, potatoes,  sage, salsify,  spinach, squash, swede, thyme, truffles, turnips, wild mushrooms

 

Meat, Poultry & Game in season in Winter

Duck, goose, grouse, guinea fowl, hare,  partridge, pheasant, rabbit, turkey, venison, wood pigeon
 


Fish and Shellfish in season in Winter

Brill, clams, cockles, cod,  crab, dab, eel, haddock, halibut, hake, langoustine, lemon sole, mackerel, monkfish, mussels, oysters, plaice, scallops, sea bass, sea bream, skate, squid, turbot, winkles

Winter Ingredients: Information and Winter Seasonal Recipes

 

Below is a selection of recipes using the best of the Winter season's ingredients. Goose

Once the bird of choice at Christmas in the UK , goose has, until late, taken a back seat to turkey. However it is making a comeback, not only for roasting whole, but also served in individual breast or leg portions when it can been cooked and served in a similar way to wild duck.

Chestnuts

Chestnuts are a versatile ingredient which can be cooked in a variety of ways - boiled, roasted, steamed, microwaved, pureed and are used in both savoury and sweet dishes. Simple roasted chestnuts in their shell are absolutely delicious and are a favourite in Britain, especially at Christmas.

Cranberries

Cranberries they can be found growing wild in many parts of the northern hemisphere,  however it is the cultivated large-berried variety which is the most widely eaten. In the UK they are in season from late October to late December and are a firm favourite to accompany roast turkey at thanksgiving and Christmas.

Oysters

Oysters are in season and at their best from October to April.  Although overfishing in the 19th century brought British native oysters to near extinction,  they are now protected by laws in an attempt to restore their numbers. They are still unfortunately, much more expensive than rock oysters.
