Baked Summer Fruit

The best of summer fruit simply cooked en papillote. A good recipe for the barbecue too.

Ingredients

2 Peaches or Nectarines, stoned and cubed
175g/6oz Cherries, stoned
250g/9oz Strawberries, halved
100g/4oz Blueberries
2 tbsp Brown Sugar
8 tbsp Orange juice

Instructions

 

1.  Preheat the oven to 180C, 350F, Gas Mark 4. Divide the fruit between 4 sheets of double thickness aluminium foil, sprinkle with the sugar and orange juice then fold the foil around the fruit to form secure parcels.

2. Place on a baking tray and bake for 10-15 minutes. Serve hot.

Use whatever fresh seasonal fruit available

Add a tablespoon of alcohol such as rum to each parcel

Serving Suggestions

Serve with cream or crème fraîche (contains dairy)
