Flamed Apple Calvados Pancakes   Veg  HT  DP  70mins 

 

Serves 4   Hot  Vegetarian  Fruit  Dessert  Pudding Alcohol

 

Ingredients

For the pancake Batter

100g/4oz Plain Flour

A pinch Salt

1 Egg

270ml/9fl.oz. Milk

1 teasp Calvados

1/2 teasp Vanilla Extract

Vegetable Oil for frying

For the filling

6 Dessert Apples, peeled, cored and quartered

4 tbsp Sugar

1 tbsp Calvados

Other ingredients

4 tbsp Sugar

2 tbsp Lemon Juice

150ml/5fl.oz. Orange Juice

2 tbsp Calvados

 

Instructions

 

1. Preheat the oven to very low. Place the batter ingredients in a large bowl and whisk until smooth and lump free. Transfer the batter to a measuring jug.

 

2. Heat the oil in a frying pan until very hot, then pour most of it into a heatproof container, leaving just enough oil to coat the pan.

 

3. Pour in a little of the batter, tilting the pan to evenly cover the base with a thin layer. Fry over a moderate heat, shaking the pan gently so it doesn't stick, until the underside is golden. This will only take 1-2 minutes.

 

4. Using a palette knife, turn the pancakes over and cook the other side until golden.

 

5. Remove to a plate , cover with foil and place in the warmed oven whilst you cook the remaining pancakes in the same way. Keep warm.

 

7. Place the filling ingredients in a saucepan, bring to simmering point then cover and cook over a low heat for about 10 minutes, until the apples are just tender. 

 

8. Meanwhile, place the remaining sugar, lemon and orange juice in a large frying pan and heat, stirring, until the sugar has dissolved and the mixture has slightly thickened.

 

9. Divide the filling mixture between the pancakes, roll up and place in the frying pan containing the syrup. Place over a low heat and warm through for about 5 minutes, spooning the juices over the pancakes several times during cooking.

 

10. To serve -  warm the remaining calvados in a small pan or ladle. Carefully set it alight and pour over the pancakes.  Serve immediately.
