Ingredients 450g/1lb Fresh
Apricots, stoned and quartered
Instructions
1. Place the apricots in a saucepan together with enough of the water to just cover .
2. Place the pan over low heat and cook the apricots until they become very soft, about 15 minutes.
3. Meanwhile, dissolve the sugar in the remaining water bring to the boil and boil rapidly to reduce to two thirds of the original quantity.
4. Transfer the apricots to a food processor and process to a puree.
5. Add the apricot
puree to the sugar syrup, mix well then transfer the mixture into a serving
dish. Decorate with chopped almonds and chill thoroughly before serving. Serve
cold with whipped cream.
