Sultana Cheese Dessert Veg CD DP 35mins Serves 4 Cold Vegetarian Fruit Nuts Alcohol Desserts Puddings Gluten Wheat Free
Ingredients: 75g/3oz Sultanas 4 tbsp Water 4 tbsp Sugar 2 tbsp Rum 75g/3oz Flaked Almonds 375g/13oz Cream Cheese
Instructions
1. Place the sultanas, half the sugar and water in a small saucepan, bring to the boil and cook for a few minutes until most of the water has evaporated.
2. Remove the pan from the heat, add the rum, stir well and leave to soak for 10 minutes.
3. Meanwhile, toast the almonds in a dry frying pan until golden brown.
4. Please the cheese in a mixing bowl together with the rum from the soaked sultanas and the remaining sugar and beat until light and fluffy.
5. Add the sultanas and 3/4's of the almonds and mix well.
6. Divide the mixture between 4 serving glasses and sprinkle with the remaining almonds.
Chill for no longer than 10 minutes before serving.
