Vanilla Mango Parfait   Veg  CD  DP  15mins

Serves 4    Vegetarian    Cold    Fruit Dessert    Ices  

Ingredients
450g/1lb Tinned Mango
300g/11oz Vanilla Ice Cream
175g/6oz Curd Cheese

Instructions

1. Drain the mango, reserving the syrup and set aside 2 slices for decoration.

2. Place the remaining mango flesh in a food processor and process until smooth.

3. Transfer the pureed mango to a large mixing bowl together with the ice cream, curd cheese and 2 tbsp of the reserved syrup and mix well.

4. Divide the mango mixture between 4 serving glasses and decorate with the remaining chopped mango flesh. Serve immediately
