Eve's Pudding Veg HT DP British 65mins Serve 4 Hot Vegetarian Fruit Dessert Puddings Britain Europe
Ingredients: 450g/1lb Cooking Apples 50g/2oz Sugar 60ml/2 fl.oz. Water For the topping 75g/3oz Butter 2 Eggs 75g/3oz Caster Sugar 100g/4oz Self-Raising Flour
Instructions
1. Preheat the oven to 190C, 375F, Gas mark 5 and grease an ovenproof dish.
2. Peel, core and thickly slice the apples. Place in the greased dish together with the sugar and water. Cover and bake for 10 minutes.
3. Meanwhile, cream together the butter and sugar then gradually beat in the eggs a little at a time. Add the flour and beat well with a wooden spoon.
4. Spread this mixture over the hot apples, return to the oven and bake for a further 35-40 minutes.
5. To serve - sprinkle with sugar and serve hot.
