Serves 4 Cold Vegetarian Fruit Dessert Puddings
Ingredients 1 Fresh Pineapple 300ml/10fl.oz. Double Cream 4 tbsp Natural Greek Yoghurt 3 level tbsp Icing Sugar 1 Macaroons, crumbledInstructions 1. Cut the pineapple in half lengthways and carefully scoop out the flesh, keeping the shell intact. Cut the flesh into small cubes and place in a bowl.
2. In another bowl, lightly whip the cream then add the yogurt, sugar and macaroons and mix well. Chill for approximately 30 minutes.
3. To serve - spoon the cream mixture into the pineapple shells. Place on a serving platter and serve immediately.
