Ham and Asparagus Quiche���

Ingredients

�� 225g/8oz Shortcrust Pastry

�� 25g/1oz Butter

�� 1 Onion, chopped

�� 100g/4oz Ham, cut into thin strips

�� 75g/3oz Asparagus, cooked

�� 2 Eggs, beaten

�� 150ml/5fl.oz. Single Cream

�� Salt and Black Pepper

Instructions

�

1. Preheat the oven to 200C, 400F, Gas Mark 6.

�

2. Roll out the pastry to 6mm/1/4 inch thickness and use to line a� 20cm/8 inch flan tin . Prick the base of the pastry with a fork then line with greaseproof paper and fill with baking beans. Place on a baking tray then bake in the oven for 15 minutes.

�

2. Meanwhile, heat the butter in a pan, add the onion and fry gently until soft and transparent.� Cool slightly then spread over the base of the partly cooked pastry case.�

3.� Arrange the ham and asparagus on top of the onions.

�

4. In a bowl, beat together the eggs, cream , salt and pepper then pour into the flan case over the

onion, ham and asparagus.�

�

5. Return to the oven and bake for 30-35 minutes until� set and golden brown.� Serve hot or cold.
