Ham and Asparagus Quiche

Serves    4      Hot   Cold   Picnic    Pork  Bacon Vegetables 

 

Ingredients

   225g/8oz Shortcrust Pastry

   25g/1oz Butter

   1 Onion, chopped

   100g/4oz Ham, cut into thin strips

   75g/3oz Asparagus, cooked

   2 Eggs, beaten

   150ml/5fl.oz. Single Cream

   Salt and Black Pepper

 

Instructions

 

1. Preheat the oven to 200C, 400F, Gas Mark 6.

 

2. Roll out the pastry to 6mm/1/4 inch thickness and use to line a  20cm/8 inch flan tin . Prick the base of the pastry with a fork then line with greaseproof paper and fill with baking beans. Place on a baking tray then bake in the oven for 15 minutes.

 

2. Meanwhile, heat the butter in a pan, add the onion and fry gently until soft and transparent.  Cool slightly then spread over the base of the partly cooked pastry case. 

 

3.  Arrange the ham and asparagus on top of the onions.

 

4. In a bowl, beat together the eggs, cream , salt and pepper then pour into the flan case over the onion, ham and asparagus. 

 

5. Return to the oven and bake for 30-35 minutes until  set and golden brown.  Serve hot or cold.
