Pear and Pine Nut Bread     Veg  CD  CBF  85mins

 

 

Makes 1 loaf     Cold  Vegetarian  Fruit  Nuts  Baked Fayre 

 

Ingredients

100g/4oz Butter, softened

225g/8oz Sugar

2 Eggs

200g/7oz Plain Flour

� teasp salt

1 teasp Baking Powder

60ml/2fl.oz. Sour Cream

1 teasp Vanilla Extract

1 teasp Almond Extract

2 large Ripe Pears, peeled and diced

50g/2oz Pine Nuts, toasted

 

Instructions

 

1. Preheat the oven to 180C, 350F, Gas Mark 4 and lightly oil  a loaf tin with oil.  Set aside.

 

 2. In a large mixing bowl, cream together the butter and sugar until pale and fluffy. 

 

3. Add the eggs, one at a time, mixing thoroughly between each addition.

 

4. Add the flour, baking powder, salt, sour cream, vanilla and almond extracts, and beat well. 

 

5. Fold in the diced pears and the pine nuts then pour into the loaf  tin and bake for 1 hour. Cool on a wire rack.

Beat � To introduce air into a mixture using a utensil such as a wooden spoon, fork or whisk, in order to achieve a lighter texture.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
