Lacy Molasses Wafers    Veg    CD  CBF  25mins

Makes 50 - 60 small biscuits    Cold Vegetarian  Biscuit  Cookies Baked Fayre   Eggless

 

Ingredients:

120ml/4fl.oz. Molasses

100g/4oz Sugar

100g/4oz Butter

100g/4oz Plain Flour

1/2 teasp Baking Powder

1/4 teasp Bicarbonate of Soda

 

Instructions

 

1. Preheat the oven to 180C, 350F, Gas mark 4 and grease 3-4 baking sheets.

 

2. Place the molasses, sugar and butter in a pan and bring slowly to the boil. Boil for 1 minute then remove from the heat.

 

3. Sift together the flour, bicarbonate of soda and baking powder then add to the pan and stir well. Place the pan in hot water to prevent the batter from drying up.

 

4. Drop quarter teaspoons of the mixture onto the baking sheets, spacing 7.5cm/3inches apart as they will spread during cooking. Bake in the cover for 10 minutes. Cool slightly then remove from the trays with a palette knife and transfer to a wire rack and cool.

Beat � To introduce air into a mixture using a utensil such as a wooden spoon, fork or whisk, in order to achieve a lighter texture.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
