Orange Mazurka   Veg  CD  CBF   Polish  80mins

 

Makes 1 x 25cm/10 inch cake    Cold  Vegetarian  Nuts  Fruit  Cakes Bake Fayre  Poland  Europe

 

Ingredients:

4 Oranges, pricked in a few places

300g/11oz Icing Sugar

450g/1lb Self Raising Flour

150g/5oz Caster Sugar

150g/5oz Butter

2 Egg Yolks

4-6 tbsp Soured Cream

100g/4oz Chopped Almonds

 

Instructions

 

1. Preheat the oven to 180C, 350F, Gas mark 4 and grease a 25cm/10inch square shallow cake tin.

 

2. Place the flour in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar then add the egg yolk and enough soured cream to form a soft workable dough.

 

3. Turn the mixture onto a floured board and roll out just large enough to fit into the tin. Bake in the oven for 1 hour until golden.

 

4. Meanwhile, place the oranges in a pan, cover with water, bring to the boil then simmer for 5 minutes. Remove the oranges from the pan, reserving the water, and place in iced water to cool them. Once cooled, slice the oranges and remove the pips.

 

5. Dissolve the icing sugar in the reserved orange water bring to the boil and boil for 10 minutes to make a syrup. Add the orange slices and simmer for 10 minutes or until the rind is tender. Remove from the heat and cool the orange slices in the syrup.

 

6. After the cake has been in the oven for an hour, remove from the tin and place on a floured baking sheet, right side up. Arrange a layer of the orange slices over the top, draining them of any excess syrup. Sprinkle over the almonds then return the cake to the oven for 5 minutes to allow the orange slices to dry. Serve cold.

Beat � To introduce air into a mixture using a utensil such as a wooden spoon, fork or whisk, in order to achieve a lighter texture.

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Rub in -  The incorporation of fat into flour.  Butter is cubed then gently rubbed between the thumb and forefinger, lifting the mixing at the same time, until the fat is fully incorporated and the mixture resembles breadcrumbs.
