Coconut Amaretto Pie

�� Veg CD DP 45mins plus cooling

Makes 1 x 22cm/9 inch ��� Cold Alcohol Vegetarian Dessert Pudding

Ingredients

50g/2oz Butter, softened

225g/8oz Caster Sugar

2 Eggs, beaten

180ml/6fl.oz. Milk

60ml/2fl.oz. Amaretto

25g/1oz Self Raising Flour

50g/2oz Desiccated (flaked) Coconut

Instructions

1. Preheat the oven to 180C, 350F, Gas Mark 4 and lightly grease a 22cm/9 inch pie plate.

�

2. In a large mixing bowl, beat together the butter and sugar until light and fluffy.

�

3. Add eggs and beat well then add the milk, amaretto, and flour, beating well to blend thoroughly.

�

4. Stir in the coconut, mix well then pour the mixture into the pie plate. Bake for 35 minutes or until set. Cool completely before serving.
