Serves 4��� Cold�� Nuts� Flan Vegetarian�� Dessert�� Pudding�� Spain� Europe

Ingredients

Butter for greasing

A little flour

4 large Eggs

200g/7oz Sugar

200g/7oz� Ground Almonds

1 teasp Ground Cinnamon

The grated Zest of 1 Lemon

50g/2oz Icing Sugar

Instructions

�

1. Preheat the oven to 150C, 300F, Gas Mark 2 and grease a 20cm/8inch flan tin with plenty of butter then coat with flour, shaking off any excess.

�

2. In a mixing bowl, beat together the eggs, sugar, lemon zest and cinnamon, until thick and creamy.�

�

3. Gently fold in the ground almonds.�

�

4. Pour the mixture into the prepared flan tin and bake for about 30 minutes.�

�

5. Leave to cool in the tin before removing.�

�

6. To serve - transfer to a serving platter and dust with icing sugar.

�
