Ingredients
Butter
for greasing
A
little flour
4
large Eggs
200g/7oz
Sugar
200g/7oz
Ground Almonds
1
teasp Ground Cinnamon
The
grated Zest of 1 Lemon
50g/2oz
Icing Sugar
Instructions
1.
Preheat the oven to 150C, 300F, Gas Mark 2 and grease a 20cm/8inch flan tin with
plenty of butter then coat with flour, shaking off any excess.
2.
In a mixing bowl, beat together the eggs, sugar, lemon zest and cinnamon, until
thick and creamy.
3.
Gently fold in the ground almonds.
4.
Pour the mixture into the prepared flan tin and bake for about 30 minutes.
5.
Leave to cool in the tin before removing.
6.
To serve - transfer to a serving platter and dust with icing sugar.
