Sultana Cheese Dessert� �Veg�CD�DP �35mins�

Serves 4���� � Cold Vegetarian� Fruit� Nuts Alcohol Desserts Puddings�� Gluten Wheat Free

Ingredients:

75g/3oz Sultanas

4 tbsp Water

4 tbsp Sugar

2 tbsp Rum

75g/3oz Flaked Almonds

375g/13oz Cream Cheese

Instructions

�

1. Place the sultanas, half the sugar and water in a small saucepan, bring to the boil and cook for a few minutes until most of the water has evaporated.

�

2. Remove the pan from the heat, add the rum, stir well and leave to soak for 10 minutes.

�

3. Meanwhile, toast the almonds in a dry frying pan until golden brown.

�

4.� Please the cheese in a mixing bowl together with the rum from the soaked sultanas and the remaining sugar and beat until light and fluffy.

�

5. Add the sultanas and 3/4's of the almonds and mix well.

�

6. Divide the mixture between 4 serving glasses and sprinkle with the remaining almonds.

�

Chill for no longer than 10 minutes before serving.
