Christmas Pudding with Guinness�

HT� DP� � British 180mins plus standing

Serves 6+�� Hot� Fruit� Alcohol Dessert� Pudding Britain� Europe

Ingredients

125g/5oz Seedless Raisins,

25g/1oz Mixed Peel, chopped

125g/5oz Fresh Breadcrumbs

100g/4oz Soft Brown Sugar

100g/4oz Currants

100g/4oz Sultanas

125g/5oz Shredded Suet

50g/2oz Self Raising Flour

� teasp Salt

� teasp Mixed Spice

Grated rind � Lemon

1 teasp Lemon Juice

2 Large Eggs

150ml/5 fl.oz. Guinness

Instructions

1. Place all the dry ingredients in a large bowl and mix well.

2. Add the lemon juice, eggs and Guinness and mix well with a wooden spoon until thoroughly incorporated.

3. Turn into a greased 1L/2pt pudding basin, cover with greaseproof paper and secure with string. Leave to stand overnight.

4. The next day, place the pudding in a pan with sufficient boiling water to come just below the rim of the basin. Steam for 3 hours, topping up with extra boiling water as necessary.
