Baked Mackerel in White Wine���� HT�� MC�� Bulgarian�� 65mins

Bulgarian name: Skumriya na keramidi� (Mackerel on a Tile)

Serves 4�� Hot� Fish� Alcohol Main Course� Gluten Wheat Dairy free� Eggless� Bulgaria� Europe

Ingredients

3 tbsp Oil

2 Large Onions, chopped

3 Garlic Cloves, finely chopped

1 x 400g/14oz tin Chopped Tomatoes

240ml/8fl.oz. Dry White Wine

1 tbsp Freshly chopped Parsley

Salt and Black Pepper

4 Large Mackerel Fillets

Instructions

�

1. Preheat the oven to 190C, 375F, Gas Mark 5 and lightly grease a shallow ovenproof dish.

�

2. Heat the oil in a saucepan, add the onions and garlic and saut� for 5 minutes.

�

3. Add the tomatoes, wine, parsley , salt and pepper, bring to the boil then reduce the heat a little and simmer for 15 minutes.

�

4. Spread half of the sauce in the bottom of the� baking dish, place the mackerel on top, cover with the remaining sauce and bake for about 35 minutes or until the fish is cooked through. Serve hot.
