Grilled Fish with Almonds
HT MC 25mins plus marinating

Ingredients:
4 Large Fish
fillets, e.g. Cod, Bass, Haddock, Hake, Trout
3 tbsp Lemon
Juice
Salt and
Pepper
50g/2oz Plain
Flour
100g/4oz
Butter
1 Onion,
chopped
50g/2 oz
Flaked Almonds
300ml/10 fl.oz
Single Cream
Instructions
1. Place the
fillets in a shallow dish. Pour over the lemon juice and leave to marinate
for at least 15 minutes. Remove the fish (reserving the lemon juice) and dry
with kitchen paper.
2. Preheat the
grill. Season the fillets with salt and pepper and coat with flour. Place
in the grill pan which has been lined with foil.
3. Melt half
the butter and pour over the fillets. Grill for 4 minutes each side.
4. Meanwhile,
fry the onion in the remainder of the butter until soft and transparent.
Add the almonds and cook until golden turning frequently.
5. Stir in the
cream then add the salt, pepper and reserved lemon juice.
6. To serve,
place half the sauce in a warmed serving dish. Place the fish on top then
pour the rest of the sauce over. Sprinkle with chopped parsley or Chives.
