Ingredients:

Mackerel
Salt
and Black Pepper
1
Onion, thinly sliced
2
Bay Leaves
2
tbsp Brown Sugar
150ml/5fl.oz
Cold Black Tea
150ml/5fl.oz.
Malt Vinegar
Instructions
1.
Preheat the oven to 180C, 350F, Gas mark 4.
2.
Remove the heads from the fish, gut, wash under cold running water then dry on
kitchen paper.
3.
Spread the onion slices over the bottom of a shallow ovenproof dish then place
the fish side by
side
on top of the onions together with the bay leaves.
4.
In a bowl, mix together the cold tea, vinegar, sugar, salt and pepper and blend
well.
5.
Pour over the fish, cover with aluminium foil and bake in the oven for 45
minutes or until the fish are
tender.
6.
Remove from the oven and serve hot or allow to cool but do not refrigerate. The liquor will
lightly set. If serving cold, serve at
room temperature.
