Trout with Almonds Recipe

This is a classic recipe, also known as trout almandine, where whole trout are pan fried in butter with flaked almonds.

Ingredients

4 Whole Trout
Plain Flour seasoned with salt and pepper
175g/6oz Butter
50g/2oz Flaked Almonds Juice of � a Lemon
Lemon Wedges to garnish
 

Instructions

 

1. Clean and dry the fish, but leave the heads on. Coat with seasoned flour.

2. Melt 100g/4 oz of the butter in a large frying-pan and fry the fish, two at a time if necessary, for 12-15 minutes turning them once, until they are tender and golden on both sides. Drain and keep warm in the oven or under a very low grill.

3. Clean out the pan and melt the remaining butter; add the almonds and heat until lightly browned then add a squeeze of lemon juice and pour over the fish. Serve at once, with wedges of lemon.
