A Weekday Menu Recipe

 

Noodles with Almonds    Veg  HT  ACC    15mins

 

Serves 4     Hot   Vegetarian   Pasta   Nuts   Accompaniments 

 

 

Ingredients:

350g/12oz Ribbon Noodles

50g/2oz Flaked Almonds

50g/2oz Fresh White Breadcrumbs

50g/2oz Butter

Salt and Black Pepper

 

 

Instructions

 

1. Simmer the noodles in salted water for 10-12 minutes. Drain thoroughly in a colander. Place in a deep, heated serving dish and keep hot.

 

2. While the noodles are cooking, melt the butter in a saucepan and toss the almonds and breadcrumbs in it. Fry gently until crisp and golden.

 

3. Top the noodles with the buttered almond and breadcrumb mixture. Season to taste with salt and freshly ground black pepper.

 

4. To serve - toss the noodles gently with 2 forks to distribute the almond and crumb mixture.
