Feta and Green Bean Salad�� Veg� CD� ACC� 20mins

Serves� 4�� � Cold� Vegetarian� Vegetables� Nuts� Herbs� Salads� Accompaniment� Gluten Wheat Free� Eggless ��

Ingredients:

400g/14oz Fresh Green Beans, topped and tailed

�� Red Onion, thinly sliced

25g/1oz Toasted Flaked Almonds

100g/4oz Feta Cheese, cubed

For the dressing

1 Garlic Clove, finely chopped

3 tbsp Cider or Raspberry Vinegar

Salt and Black Pepper

120ml/4fl.oz. Olive Oil

1 tbsp Freshly chopped Mint

Instructions

�

1.� Bring a saucepan of lightly salted water to the boil, add the beans and cook for 5-8 minutes, until just tender. Drain and place them in cold water to stop them

they may turn a dull green.

�

2.� For the dressing, in a small bowl, mix together the garlic, vinegar, salt and freshly ground black pepper then whisk in

the Olive oil and add the mint.

�

3. To serve -� transfer the� beans to a salad bowl then add the onion, almonds and Feta cheese. Pour over the dressing and toss well.
