The word teriyaki actually refers to a specific type of cooking method,
rather than just the name of a sauce. The word is made up of the noun
teri,
which refers to a shine or lustre of the tare (sauce), and yaki
which refers to the cooking method of grilling/broiling.
Traditionally meat is dipped into or basted with the sauce before
and during cooking.
The sauce is traditionally made by mixing and heating soy sauce,
sake or mirin, and sugar or honey which is heated then allowed to
cool. It can be further boiled to reduce it to a thicker consistency
if required.
This mixture is then used to marinate or baste various ingredients
including fish, particularly the more robust flavoured
fish such as tuna, salmon or mackerel, poultry, seafood such as
prawns, meats such as pork, beef and lamb, and tofu. It can also
be served cold as a dipping sauce, as in bento menus, with
tempura or with sushi, and can be flavoured with additional
ingredients such as ginger, sesame or garlic.
