Parsnips with Madeira Recipe���

Ingredients
900g/2lb Parsnips,
peeled and cut into chunks
60ml/2fl.oz. Madeira or Dry Sherry
120ml/4fl.oz. Double Cream
50g/2 oz Butter
Sea and Black pepper
50g/2oz Walnuts, chopped

Instructions
�
1. Preheat the
oven to 190C, 375F, Gas Mark 5 and grease a shallow ovenproof dish.
�
2. Place the
parsnips in a large saucepan, cover with water bring to the boil then simmer for
10-15 minutes or until tender,
�
3. Drain the
parsnips well , and place in a large mixing bowl together with the Madeira or
sherry, cream and half of the butter. Season with salt and pepper and mash
well.�
�
4. Transfer to the
greased dish, dot with the remaining� butter and sprinkle walnuts over the
top. Bake for 20 minutes until browned.� Serve hot.

Makes a nice
change to roasted parsnips as an accompaniment to roast turkey at Christmas.
