Parsnips with Madeira Recipe

Ingredients
900g/2lb Parsnips,
peeled and cut into chunks
60ml/2fl.oz. Madeira or Dry Sherry
120ml/4fl.oz. Double Cream
50g/2 oz Butter
Sea and Black pepper
50g/2oz Walnuts, chopped
Instructions
1. Preheat the
oven to 190C, 375F, Gas Mark 5 and grease a shallow ovenproof dish.
2. Place the
parsnips in a large saucepan, cover with water bring to the boil then simmer for
10-15 minutes or until tender,
3. Drain the
parsnips well , and place in a large mixing bowl together with the Madeira or
sherry, cream and half of the butter. Season with salt and pepper and mash
well.
4. Transfer to the
greased dish, dot with the remaining butter and sprinkle walnuts over the
top. Bake for 20 minutes until browned. Serve hot.
Makes a nice
change to roasted parsnips as an accompaniment to roast turkey at Christmas.
