Ingredients
450g/1lb Fresh
Cassava Root (Yucca, Maniot) , peeled and cut into chunks
1 Egg
2 tbsp
Margarine
Salt and White
pepper
1 teasp Baking
Powder
Flour for coating
Oil for frying
Instructions
1. Place the
cassava in a large pan of salted water, bring to the boil and cook for 25-30
minutes until tender.
2. Drain well,
return to the pan and mash until smooth.
3. Add the egg,
margarine, pepper, salt and baking powder and mix thoroughly.
4. Using lightly
floured hands, form into small balls and coat with flour.
5. Fry in hot oil
until browned on all sides. Drain on kitchen paper and serve immediately.
