Cassava Puffs� Veg� HT� ACC� West Indian� 50mins

Serves 4-6��� Hot� Vegetarian� Vegetables� Accompaniment�� Caribbean� West Indies Nth American� North America

�

Ingredients�

450g/1lb Fresh Cassava Root (Yucca, Maniot) , peeled and cut into chunks

1 Egg�

2 tbsp Margarine�

Salt and White pepper��

1 teasp Baking Powder�

Flour for coating

Oil for frying

Instructions

�

1. Place the cassava in a large pan of salted water, bring to the boil and cook for 25-30 minutes until tender.

�

2. Drain well, return to the pan and mash until smooth.�

�

3. Add the egg, margarine, pepper, salt and baking powder and mix thoroughly.�

�

4. Using lightly floured hands, form into small balls and coat with flour.�

�

5. Fry in hot oil until browned on all sides. Drain on kitchen paper and serve immediately.
