Roast Jerusalem Artichokes Veg HT

Ingredients
675g/1� lb Jerusalem Artichokes, peeled and cut into 5cm/2-inch chunks
2 Garlic Cloves,
crushed
Salt and Black Pepper
3 tbsp extra-virgin
Olive Oil
1 tbsp freshly chopped Parsley
Instructions
1. Preheat the oven to 220C, 425F, Gas Mark 7.
2. Place the
artichokes, garlic, salt pepper and oil in a large shallow roasting tin in one
layer and mix well.
3. Roast for 20 minutes or until tender, turning once or twice during the
cooking period.
4. Just before serving, sprinkle with the parsley.
