Basic - Preparing Mushrooms

Trim the stalk base. Either wipe with slightly damp kitchen paper or peel the skin off the caps. Rinse briefly under cold running water, cap side up. Avoid getting water in the brown "gills" and dry immediately.� Pull the stem from the caps if desired.
