A Weekday Menu Recipe

 

 

Duck with Almonds  HT Chinese MC 15mins plus marinating

 

 

Serves   4      Hot   Chi  Poultry  Alcohol  Nuts Main Course  Dairy Free  Eggless

 

Ingredients

350g/12oz  Duck Meat, very thinly sliced into 5cm/2 inch lengths

2 slices Fresh Ginger, shredded

1 teasp Salt

3 tbsp Vegetable Oil

2 Spring Onions, thickly sliced on the diagonal

1 teasp Sugar

2 tbsp Soy Sauce

4 tbsp Frozen Green Peas

5 tbsp Flaked Almonds, toasted

2 teasp Cornflour

3 tbsp Stock

2 tbsp Dry Sherry

 

Instructions

 

1. Place the duck slices, ginger, salt and 1 tablespoon of the oil in a large bowl, mix well and leave to marinate for at least 15 minutes.

 

2. After that time, heat the remaining oil in a large frying pan or wok until very hot. Add the duck and spring onions and stir fry for 2 minutes.

 

3. Add the sugar, soy sauce, peas and almonds and stir fry for a further 2 minutes.

 

4. In a small bowl, mix together the cornflour, stock and sherry then add this to the pan and cook, stirring until the sauce thickens. Continue to simmer for a further 3-5 minutes.
